TALLTINES FAVORITE VENISON RECIPES
You have brought home
the meat, now what do you do with it? Cook up some tasty recipes
of course! The recipes below are some of my favorites.
Venison is a lean meat and part of a low fat / heart healthy diet -
make it a regular part of yours!
VENISON RUMP WITH GARLIC/BACON
2-3 lb rump roast
2 cloves minced garlic
6 slices bacon
paprika
salt/pepper
natures seasons
Place frozen roast in a
heavy iron skillet with ½ c water in the bottom. Spice
roast, then lay minced garlic on top, and follow with stips of raw
bacon. Finish by spicing again.
Bake in a 350 oven for 45
minutes per lb or until meat thermometer reads medium done for
beef/venison. Do not overcook as it will make lean meat
dry. Do not slice until ready to serve. Use an electric
knife for thin slices, cut against the grain for better eats.
Pan drippings make a great
brown gravy for the roast.

VENISON
COFFEE POT ROAST
2 lb roast or stew meat
2 cloves minced garlic
½ onion in chunks
1 cup strong coffee
1-2 c water
salt/pepper
natures seasons
Place all ingredients in a
heavy iron pot with a tight fitting lid OR a crockpot. Bring to a
boil and simmer until tender. 3 hours for stovetop, 8 hours for
crockpot.
Mix 1/4 c flour in ½
cup water and blend until smooth. Add this to your pot broth to
thicken for gravy.
This is an easy meal to let
cook in the crock pot all day and then serve with rice or potatoes for
you working folks.

VENISON
MEATLOAF
1 ½ lb ground meat
½ c dry oatmeal
1 egg
½ onion
1 clove garlic
½ bell pepper
bacon
spices to taste
parsley/basil to taste
Preheat oven to 350F
Chop vegetables and combine
with meat, beaten egg, oats and desired spices in large
bowl. Mix together and place in loaf pan. Lay strips
of bacon or bbq sauce on top before cooking. Bake for 45 minutes.
TIP: Use whatever peppers
are in season, banana peppers, jalepeno or chile in any combination
will work too.
Variation 1: Spread leftover
mashed potatoes on the loaf 15 minutes before it is done.
Variation 2: Pour small can
of tomato sauce on top of meatloaf before cooking.

VENISON BBQ TERIYAKI ON
A STICK
1-2 lbs cubed steak or backstrap
steak seasoning
bottled teriyaki sauce
Skewer meat pieces onto metal skewers or wooden skewers that have been
soaked in water. Lightly brush with oil and sprinkle with
seasoning. Grill and brush on sauce 5 minutes before they are
done. Enjoy.
